Expert Low-Carber


I have decided to start a Journal to keep me honest and to help with this Low carb Journey that I and my husband have ventured into. We started on 9/6/09, I weighed in at 352 and as of monday I weigh 339. I am a Girl Scout leader with two exhausting troops and a 17 year old daughter who I homeschool. I am in a wheelchair from being hit head on by a drunk driver 16 years ago. I have put on a lot of weight since this and now is the time to change that. We started back at the YMCA pool last week and I have been 4 times since...it feels amazing to get in the water and move, still feeling very sore after but working through that. I have Type II diabetes and hyperthyroid, also constant pain. I have noticed that the last 10 days I have been feeling wonderful. The first two days I could have beat a kitten...but I seemed to have leveled off around day 4. My hubby is doing super too, he is a nurse and loves the way he feels on this way of eating. We have looked at the L/C cruise and called to see if they have wheelcair accessible rooms, waiting to hear back. We would love to go and it would be our almost 19 anniversary. I have decided to post food and activity.
Breakfast Chicken and broccoli about 2 cups 1 oz pork rinds w/splenda & cinnamon, lunch cheesestick and diet pepsi, dinner going to GS leader banquet...say a prayer...
Anyone out there just starting a journey who wants to chat....I am here.

I am finally home....Girl scout banquet was so hard to get through, they had all country food, covered in gravy or breaded. I ate 4 pieces of chicken and a salad. Lots of water with lemon and a diet pepsi. They then put out all the new Nuts and Candy for the sale....we could eat whatever we wanted...I had some nuts and wanted to beat someone with the candy. After it was over I had planned to go workout at the Y pool, I almost didn't...so tired...but I thought about the cruise and decided to go. Great workout with my Daughter and we had the huge pool to ourselves with great music playing. Now snacking on pork rinds w/splenda & cinnamon.
Can anyone tell me the benefits to taking Coconut oil...I have seen alot of posting about it. hum...N

Hi Nancy!! Welcome! I'm glad you've found this forum, it is so supportive and the people here are wonderful! It sounds like you are off to a great start!
Sorry to hear about your accident from years ago. Thank the Lord you survived!
That would be wonderful if you could go on the cruise, hopefully that works out for you.

I know what you mean about pot luck kind of meals, they are hard to get through. The last one I was at I had brought a low carb casserole (WhiteCastle Pie from Linda Sue's website) I was toward the end of the line and by the time I got up there, it was almost all gone!! Everything else left was really high carb stuff except for a few veggies. LC food is the best!

OH, you asked about coconut oil, I haven't started taking it yet, but if you read here many have and love the benefits of it.

Thank you so much for your kind words...yes that meal was a challenge, plus I was sitting with the weight watchers group, who were carbo loading for winter, never knew cheesecake was on the WW plan! No, I'm not going on the cruise. I wish I could though, I'm sure it will be great! If you go I want to read all about it!!

Hi Amethyst...We registered yesterday for the cruise!!! aaahhh...so excited, nervous too! Now I have to be a good girl, yikes. We have to start really saving to make it, credit cards are a wonderful thing, dangerous. We were planning on a cruise for our 20th anniversary, so a year early with be ok. Today was an adventure day. Hubby had a day off(yippee), so we looked up asian markets(gonna find those darn noodles), health food stores, and fresh markets in Greensboro, NC, about 75 miles from home in VA, but closest biggest city. Life in the boonies...low carb doesn't exist here...really. Everything here is sugary or fried...even the veggies. Anywho, we traveled and searched...hit many dead ends, we did find some interesting items, we upset the heck out of the cranky low fat lady at the health food store because we dared ask if the store had a low carb section. You would have thought we asked her if she could run a mile uphill naked We found the tofu shirataki noodles at Earth Fare, wanted the others but hey we settled. We went to a wonderful tandori grill place that had all sorts of meats and vegs to be grilled...without added sauce. We ate good, beef, pork, & shrimp with sesame oil, loads of veggies and a lil chix broth. We then went to a mexican butcher store, gosh they had some great steaks and a leg of lamb...glad I bought a cooler. We also found blue crabs, alive and for 6 dollars a dz. Got those too, after all it is my name. I love to go crabbing. We love the Fresh Market, lots of cheese samples and salami, we bought loads of veggies to put in the dehydrator to make some crunchy snacks. Hubby is slicing and filling it now, zucchini, green beans, rutabega, turnips...oh my. Last stop was Sams for doggy food and finally home....10 hours later.
We then made 100 fried pies for a girl scout bake sale tomorrow...aaahh! I need to give up scouts...too much food. I came up with a interesting concoction for dinner....I will call it Tropical Pollo....Chicken tenders pounded flat sprinkled w/crazy mixed up salt, then a slice of genoa salami cut in half and then I skewered them on sticks, rolled in coconut flour, spinkled w/olive oil & SF syrup tiny bit, oven for 13 min....yummy with a salad. I am exhausted after today, but still feeling good on this woe.

Wow! That was some shopping spree! I'm coming over to dinner at your house!!! LOL! I'm glad you had a good trip and were able to find a good place to eat. I haven't found those noodles yet, we have a Whole Foods here, but it is not near anywhere I drive and money always seems to be an issue too.

You've sure been busy! I have too. I meant to mention that I'm a fellow homeschooler too. Your dinner sounds good too! Yum!! Enjoy and have a great rest of the weekend!!

Hi Amethyst, Homeschoolers are the coolest! We have homeschooled my daughter all the way she is in 12th grade and will be starting college in January for Graphic Design. She is very creative, a pain in the neck teenager but a creative one. What grade are you homeschooling this year? Yes the trip was fun, hubby is very spontaneous, one morning this summer he woke me up at 6:30am and said do you want to go to Niagara Falls, and we left in an hour. Great trip, going to take Girl Scouts there in June 2010. Wish you could come for dinner, love to have a low carb close by. No one understands this way of eating. My bff thinks I have lost my mind. Hi Kim, Yes definately trying to get creative, I actually thought of that concoction while I was doing water aerobics class.

Hi Deanna, These rutabegas are destined for mock potato chips, slice with a mandolin, soak in chicken stock overnight, let dry on paper towels, and pan fry or quick deep fry. Works well as a sub for chips. I try to watch sodium so I don't salt them, the chix broth gives a light salt taste. What do you put in them when you mash them, sounds yummy, I think mashed would go great with the leg of lamb roast I bought...thinking of dinner for tomorrow. Take care...happy Lcing...nancy

Yesterday was a long day, we had success at the festival for Girl Scouts and I stuck on my diet. Our booth was set up in between a Winery(it was a wine festival) and a snow cone/funnel cake stand. KFC roasted chicken to the rescue, yup ate four pieces, a side salad, & unsweet tea...got some interesting looks but I had lots of energy to make it through the long day. All those carbfilled fried pies were out the door in 1 hour and the girls did face painting and sold jewelry, scrunchies, and homemade dog biscuits. Home at 8pm, hubby and I made caulifried rice, yum with lots of curry. Started crocheting scarves for the GS wounded warriors program, 100 by Christmas. Up till 3am...too much in my mind to sleep. Breaky was 2 cups chicken & broccoli and diet mt dew, got to shake those. The Y is open and it is time to shake my booty and make some waves.

Today started with hubby waking me up at 5am asking me how to make a mock danish....who cares at 5am....good wife got up and made dh a double. Then I couldn't go back to sleep, watched tv and made jewelry for awhile. Made breaky fried eggplant cut very thin in butter spread with brie cheese and a cup of caulifried rice. yum... oooh weighed w/ dh...down 8 more pounds. Water workout at the Y for 2 hours<I was talking with the ladies so lost track of time, but I was moving the whole time^may pay for this later! Lunch was two double cheeseburgers gonna give the buns to my puppies. I am planning to make leg of lamb and rutabega chips for dinner. Lots of water today and feeling lots of energy with only 3 hours sleep< have to get some actually deep sleep tonight.

Your user name caught my attention, so I had to stop by for a big "howdy!" from Texas. I'm usually pretty noisy around here, but with the beginning of the school year, my job as a teacher has kept me extremely busy and tired.

I read that you're a homeschool mom. I schooled my two sons who are grown now. The homeschooling years were so much fun. You are so busy with the Girl Scouts. If I had made 100 pies, I'd have eaten nearly that many as well.

Hi Jane, A big Virginia Howdy back at ya! Great to hear from you, yes homeschooling is fun, and trying at times. I guess all teens try their parents mine is working overtime. Scouts could be a full time job, and I make lots of fried pies. I am getting immune to them. Weird, I used to same an apple or peach one for myself always. Now nothing and I don't miss it. My user name came about because the sport of going crabbing to actually catch blue crabs is one of my favortite activities. Granted I have to travel to get to the coast to do this, I love it. Still trying to find a few more crabbing days before the warm weather leaves and so do the crabs. My daughter(Becca 17) is thinking of being a teacher, I am trying to get her to job shadow at a local school to see if she likes it. She has her own Girl Scout troop that she leads and she is very good with children. Hopefully she will find her passion. Take care...Nancy
