Woohoo!! 388!!! OK.....keepin' it simple....I CAN do this.....

Must share this easy low carb recipe I just made....

4 oz sliced mushrooms
1 T butter
1 T dried minced onion reconstituted
1/2 t garlic powder
2 cups chicken broth
1/4 c heavy cream

Cook mushrooms and onions in butter. add garlic powder. Add broth and let cook for a little longer so the mushrooms are cooked to your liking. Add cream and cook about 5 minutes. I LOVE this!!

343 calories, 29 fat, 7 protein and 9 net carbs.

I do something similar with mushrooms .... Love my mushrooms.

Good KISS, (Keep It Simple and Succeed), results.

Me .... probably deeper in the pit but am busy with guests so will wait until tomorrow to sort myself out. Meantime ......

We can stay low carb for another 24 hours

Holding steady at 388.....just trying to figure out food for the day. I was thinking of making some homemade cream of celery soup....just not sure yet. I have some more cabbage and was also thinking of doing something with that. Also, I think I am going to take the turkey wings out of the freezer and put them in the crock pot and get some broth started from that. So many options and so many decisions...lol.

I saw Jimmy post this on facebook and tried it today.....

8 slices pepperoni
2 eggs
1/3 cup shredded Mozzarella cheese

I used a small TFal skillet. I turned heat on medium low. I place my pepperoni in the bottom of the pan while heating up. (I like crisp pepperoni so I actually flipped mine before pouring rest of stuff in pan.)

Mix the eggs and cheese real well. (make sure you really mix it, because I don't think I mixed mine enough). Pour over pepperoni. When egg/cheese mixture puffs up, flip it and finish cooking.

It was real good!

221 calories, 20g protein, 14g fat, and 2g carbs

Those pepperoni eggs sound great! I had some of my broc cheese soup yesterday and will finish that today. I should just keep that made all the time. I need to make some chicken veggie soup to have on hand also. We're having such cold damp weather that we NEED soup!!!

A friend of mine makes soup with smoked turkey legs and veggies. I need to see if I can find some of those too!

Let's stay on this straight and narrow!
