Hi Moonius,

I am new to this forum today but have been lowcarbing for, oh geez, almost 5 years. It sounds like you are doing great. It also sounds like you are going to have a lot of temptations and I just wanted to say that when I began I did too. My mom loves to bake and I was faced daily with fresh cookies, banana bread, etc... After a few weeks, all cravings and temptations just went away for me. It was almost miraculous. I had no trouble resisting, I just didn't have an appetite for them anymore. So, I wanted to say hang tight, it is going to get so much easier.

Also, I have hope for your wife. When I started, my dh was a die hard skeptic, but within weeks he did all the research and started with me. Now he is my backbone that keeps me going, ha ha.

Well, I made it through Saturday without going off my food plan. Sunday was a bit more of a challenge. I started the day with some flat iron steaks. I sliced them into strips and cooked them in a cast iron skillet with red onions and garlic. It was absolutely delicious!! Then we visited a new church in Plains, which is about 15 miles from home. One family invited out to eat at a local Mexican restaurant and I was quick to tell her that I was on Atkins. She assured me that I would be able to find something there to eat. Along with the traditional Mexican fare they had a buffet with beef brisket, vegetable medley, mashed potatoes, gravy and dessert. So I just got a heaping helping of brisket and some vegetables. I had some blue cheese dressing and sour cream on the side for dipping, which I used sparingly. I wasn't even tempted by the chips and salsa, which is my absolute favorite thing to eat. Since I'd never been to this restaurant before, I just sampled about a half teaspoon of the salsa, it was good.

In the afternoon I snacked on pork rinds and cream cheese at home and in the evening we went to the pool with some friends from church. They had purchased pizza, so I got four slices of meat and cheese pizza and just ate the toppings and drank diet Pepsi. Last night for a late night snack, I had the leftover steak from breakfast and white tea. I think I made out pretty good for the first weekend on plan.

Man, you were in a lot of challenging situation! I have been on Atkins for 5 years I have not had that many difficult eating sitations the whole time, lol. However, I am pretty vocal, if people are ordering pizza I ask if we can do something else or I have brought my own. Good job.

Usually after church people invite us out to eat or they have dinner at the fellowship hall at the church. It's always going to be a challenge. But thank God there's usually some meat and vegetables that I can eat. I just have to resolve to stay away from the carbs. The good thing is I'm not even tempted by the sweet stuff anymore.

Just try to suggest a restaurant that will be easier. We go to a buffet a lot of Sundays and they always have sliced roast beef, so I just eat that or we go to Scores which is a chicken and ribs place, bith work so easily. Whene we do dinners at church or similar socail situations I always bring a dish I know I can eat. Or if they are doing sanwiches I bring my own food. People understand.

When I lived in Phoenix we had a plethora of restaurants to choose from. Here in the heartland these small towns may only have one or two restaurants. I like your suggestion about bringing a dish to church that you know you can eat. Thanks for your input!

This is day two of week two in the induction phase and there are some positive changes already. My wife keeps saying I look like I'm losing weight but it's just in my face. That's where my weight loss usually shows up first. I don't have a scale because it's hard to find one with a capacity of 350 or more and I haven't taken my measurements. Think I'll do that today because I want to track the inches lost as well as the pounds lost. My shirts are beginning to feel a bit looser. I ride my bike to work and that's probably helping also. The pain that I had in my right shoulder blade area is now gone! Every morning in the shower I would let the hot water beat on that area to soothe the pain but this morning when I did that I noticed the pain wasn't there. Also the recurring chest pains seem to be gone. I haven't checked my urine but judging by the taste in my mouth, I think I'm in the state of ketosis.

Yesterday I broiled a NY Strip steak for breakfast and had the obligatory cup of coffee. For lunch I had my usual salad with Romaine, grated cheese, grilled chicken and ranch dressing. for my afternoon snack I had 2 turkey slices, bacon and some Laughing cow cheese with celery. Then for dinner I had baked chicken and fresh string beans with bacon. Suffice it to say I fared sumptuously yesterday (and everyday on Atkins)!

Thanks Suzanne for the reminder about taking before pictures. I do have one but I should take a couple more. Thanks to Sam for listening to my broadcast! Glad you enjoyed the music.

Yesterday started off good. I wasn't hungry in the morning, so I drank my coffee and carried two hamburger patties with me and ate them when I got to work. For lunch I had my usual salad with Romaine, grated cheese, turkey slices and ranch dressing. In the afternoon I ate 2 string cheese sticks and pork rinds with cream cheese. We were invited out to dinner last night and I told the hostess I was doing Atkins, so she cooked steak for me. I ate steak, green beans, cucumber salad and deviled eggs which was good. Then I tried some Polish sausage she had cooked with peppers and onions but it tasted sweet (maybe it had sugar in it). Also I had a diet Pepsi which was sweetened with aspartame and for dessert sugar free jello with Redi-Whip. I hope the aspartame and the sugar in the Redi-Whip and sausage didn't kick my body out of fat burning mode.

Another positive thing I've noticed is I'm sleeping better these days!!! The last three nights I have had some really good sleep which is such a wonderful thing because usually I don't sleep very well.

Here's the post that has the no bake cheesecake recipe. Something I like to do is to take a piece out of the fridge or my lunch cooler about 30 minutes before I'm going to eat it! ...Makes it a little more creamy!

My wife made this same recipe but she added melted baker's chocolate and some cocoa to the mix. WOW! Tasted like a light chocolate pudding!

Sounds like you are doing good, but I would try to dodge the sausages, they tend to have fillers in them. I would eat them if there was nothing else and I was starving, but if there were other options like steak, stick with the steak. Also , be very careful with the dressings, most of them have sugar. Try having bigger meals of meat, then you will find you do not need the snacking.

Thanks for your input Suzanne. I'm going to avoid eating sausage for now. I've been using salad dressing (sparingly) that has no sugar and only 2 grams of carbs per serving. In reference to eating bigger meals, I find that eating about every three hours helps my blood glucose levels remain steady. When I eat a lot at one meal I tend to have a surge in my blood sugar.

Reading your posts - looks like you are doing great !

About the sausages - If you have a pork store or butcher near you , they usually are accommodating in making a pork , or chix / turkey sausage with spices of your liking and absolutely no filler - or sugar .

Just makes for some variety in your menus - I also use ground pork for a breakfast sausage patty I make myself w/ "Old Bay Seasoning " "does have salt tho- if you are sensitive to salt / water retention- and some fennel seeds .
