I think Linda Sue has a recipe with roasted cauliflower sub for popcorn. But this just sounds awesome! Gonna try it this weekend with some steak and I will report back!

Ok, I tried this last night and it was delicious. Here is the recipe that I copied from The Steamy Kitchen site:

Roasted Cauliflower with Parmesan Recipe

serves 4 as side dish

1 head cauliflower, cut into small 1-inch florets
salt
pepper
2-3 tablespoons olive oil
Parmesan cheese

Preheat oven to 400F. Lay cauliflower in single layer on baking sheet, season with salt, pepper and toss with olive oil. Bake for 25-30 minutes until tops are golden brown and stems are tender. Serve with sprinkling of grated Parmesan cheese.

I must have cut some of my florets a bit larger than the 1-1/8" that she recommends, because some were soft but some were still crisp-tender. I liked the soft ones better. Next time I will test them with a fork. And I definitely used more that a sprinkling of the Parmesan cheese. It was really good.

I make parm cauli all the time. I use frozen florets, boil til tender, then add a generous amounts of butter and parm. Stir it up and eat it up! Delish.
