I just finished reading the book by Dr. Robert K. Su "carbohydrates can kill". It goes into a lot of details on how carbs cause different diseases. He also chronicles his life on low carb for several years and how things improved-even his skin! I really recommend it and especially if you know someone you are trying to covert to the low carb lifestyle!
