An easy and pleasant way to get more coconut oil into your diet without a greasy slick on top of your morning coffee.

Mushrooms are like little sponges and soak up whatever fat you cook them in. Usually I use butter or olive oil and find that after a few minutes of cooking most of it has been sucked in by the mushrooms. To keep the buttery flavor use half butter and half coconut oil or whatever ratio suits your palette.

This should work with onions or any other vegetable that you can saute, but not all veggies will soak up the oil like mushrooms do.

I saute a combo of mushrooms, chopped celery and chopped onion in the coconut oil and use it as a topping for grilled chicken or pork chops! DELISH! I love the flavor the coconut oil gives it!
