After browsing this website, I want to try frying food in coconut oil. I can't find it in my local coles or woolies. Is cooking with copha ok?? Have only ever used Copha in choccy crackles.
Thanks
Cath

Never heard of Copha, so get yourself some Nutiva coconut oil.

Copha is a vegetable shortening, google suggests substituting Crisco (Which I would not touch with a stick) so I think it's probably not a good idea, unless it is a palm oil. Chocolate crackles sound good though. Probably not legal. Try a Chinese market for coconut oil.

jellybelly: Where are you? NSW or QLD? Is there a Fundie's near you? Or another health food shop?

I've found the evco at a local health food store as well as a grocery store or two. There's a link from Jimmy's blog, but if it's a US link, the shipping might be too cost prohibitive. How about ordering from Amazon?

Realised jellybelly posted just before me.

jellybelly: You should be able to find it in your local health food store. I'm in Hong Kong and that's where I buy it, or an Indonesian/Malaysian food store but I would be concerned about pure levels. I've not know it in Chinese cooking and certainly haven't seen it in a more "local" grocery.

Health food stores everywhere. Don't know why I didn't think of asking there.
I'm from Central Cast, NSW.
Overseas ordering such a pain due to postage costs and currency conversion means triple the US dollar price. So an $8 bottle of coconut oil costs me $25 aus dollars to order online.

WAL-MART carries coconut oil in the vegetable/olive oil section. Very reasonable price!! LouAnn brand and comes in a large white container.
