Expert Low-Carber


When you get to the higher fruits rung of the OWL ladder of Atkins, you can enjoy this quick Peach Cobbler. It was ready in under an hour! I usually use fresh peaches for pies and cobblers, but wanted to use up these two cans of peaches my husband bought at the store. I'm not so fond of canned peaches, but I have to admit, these Del Monte peaches were huge slices and made an absolutely delicious cobbler. Hope you guys like it:

Mmmm, that looks really good. I love peach cobbler (and can serve this with my LC frozen vanilla bean yogurt). Can I use Carbquick for the crust Peggy?

Hmmm. I wouldn't just sub in CQ for the Carbalose in this recipe. Reason is CQ has some shortening and leavening in it, like Bisquick. Plus the resistent wheat sharch has a lot to do with this being flaky and tasting more like white flour. I found this recipe on the Tova website that uses all CQ but I've never made that recipe: http://www.tovaindustries.com/carbalose/...2.php?c=34

You might prefer to try this recipe that calls for some CQ: http://buttoni.wordpress.com/2010/12/02/...pie-crust/ Only thing, is the oat fiber is essential in that one. You could try using all CQ in it and see how that works out, but it might not be as flaky and may have the funny CQ back taste everyone doesn't like, including me. That's why I mix these flour subs, to hide that CQ taste. But I think they've improved their product and that taste isn't so noticeable as it was a couple years ago.
