Low Carb No Bake Cookies ...

I finally made LindaSue's Low Carb No Bake Cookies ... Thanks again, LindaSue for another great recipe!


All in all, I really liked them and plan to make them for my Mom (who is Type 2 Diabetic) for a Christmas Candy gift. They taste like a chewy chocolate/coconut/peanut butter fudge in my opinion and remind me of the No Bake Cookies I made as a child.

* MONDAY= Weigh in Day Lost 54 lbs on LC, gained it back + 19 more. Now going for Round 2!

I made the regular version several times last year. So this year I'll make both versions. I will love it with the coconut for me!

Trust me Julia ... You CAN'T eat just one!! LOL Thank goodness they're LC!!! They taste more like candy than cookies too. And did I mention that they're super easy and quick too??
