That looks great, Peggy, and it doesn't call for anything that I don't usually have on hand. My only dilemma would be what to do with the rest of a brick of cream cheese after using only 3 tablespoons. Most recipes that I make call for either 4 ounces or 8 ounces.

Well, I made another recipe of this with another 3T. for a pizza crust tonight to see how it does for Pizza. Thinking about trying a dinner roll with this batter, too. I suspect I can find ways to use up the balance of this block. There's always those cream cheese pancake recipes we all have.

OMG the GF-GrF pizza I made with this was amazingly good tonight. No flat "grassy" flax taste at all! I just baked the crust 20 min on parchment on my pizza pan, slipped the paper out so the air would circulate through the pizza pan holes to the bottom, sauced it, added cheese and toppings and baked another 20 min. or so. Here's my pic to show you really can pick it up and eat with your hands:

I toasted a slice, but alas, it doesn't toast any better than the other LC recipes I've trialed. I think it must be the wheat gluten that makes toast "crunchy" and that's why none of the recipes toast very well. Oh, they get brown around the edges and slightly toast, but they are not what I call "crunchy". Guess I just need to accept that fact and move on from my "toast Nirvana" quest.

Man, this made an OUTSTANDING tuna fish sandwich today! This bread has blown the socks off ALL my other bread recipes! This time the tuna fish was in the driver's seat on flavor, not the bread or any odd bread taste. Very neutral, this one! Next time I'm going to try adding some dissolved yeast (just for the flavor) and see how that comes out.
