2 tsps butter or coconut oil

1 tbl cocoa powder (I use Wonderslim Wondercocoa-not bitter don't have to add vanilla extract)
1 egg
Sweetening of choice such as 1 tbl of sf syrup of choice (my favorite is sf chocolate macadamia nut) or 1-2 pkts of Splenda or Stevia
1 square of Lindt 85% Dark Chocolate

Melt the 1-2 tsps of butter or CO in a large oversize mug in the microwave-usually about 20 seconds. Add the 1/4 cup flaxseed meal, 1/2 tsp baking powder & 1 tbl cocoa powder and mix well. Add the egg and sweetener and mix again. Float the 1 square of the dark chocolate in the middle of the batter. Nuke for about 1 minute-the top should look slightly wet and not be dried out. Turn out onto serving plate and wash mug right away as the flax can be hard to remove if it dries in the mug. Enjoy with a schmear of cream cheese or whipped cream.

It really is good stuff.

I am so impressed that my family is enjoying my LC dishes. My husband actually asks for his flax muffin instead of eating his nightly Hostess cupcake (yuck).

I just tried this recipe. I used my sweetzfree instead of the 1 tbsp SF syrup, so it may have been a bit drier than it should have been.

I used Hershey's Caramel filled chocolates on top and that was very yummy!

I wonder how this would taste with almond flour instead of the flax mean...

You might want to try half almond flour and half flax meal. It might be a little gritty with all almond flour. Almond flour would also increase the carb count a bit.

I would give this recipe a try but I've gotten very sensitive to pretty much all sugar free chocolate lately, even just one little square.

I highly recommend them (if you're like me, you won't even need the sweetener, just 100% baking choc and cocoa is delicious!)

Okay, I just made and ate my first One Minute Muffin.

This was an all day project even though it only took a minute to cook. I only had flax seeds, not meal, so I had to grind them - my stick chopper didn't work so I used my blender....whew!

Then I got half way through the recipe and realized I only had baking soda - not powder. Off to the store I went.........Anyway when I did get it assembled I realized I had a bottle of unopened DaVinci sf chocolate and used that. I didn't put candy on because I already see no movement on my scale lately.

Anyway - I liked it - it felt good to be having my coconut oil and tasting chocolate. Next time I will grind the seeds finer and use a bigger bottomed cup so it cooks all the way through. I think I'd like it a bit sweeter, so would probably put a packet in.......hey, they have these new splenda flavor blends - that might be good in that........caramel flavor..mmm
