I know LindaSue has a Parmesan Fish which is very good... I kinda made this up on my own this week, and it's similar, but has a few variations.

4-6 Tillapia Fillets
2 Eggs
1 Tbls Heavy Cream
3/4 grated parmesan cheese
1/8 cup shredded parmesan cheese
1 Tbls Italian Seasoning
3-4 Tbls Olive Oil
Garlic Salt
Pepper

Mix cream and eggs well. Heat the olive oil over medium heat. In a separate bowl combine the cheeses seasonings salt and pepper (to taste). Dip the fish fillets in the egg mixture and immediately in the cheese mixture to coat well. Place the "breaded" fish in the oil to fry and make a nice crust coating. Be sure your pan is not too hot or it will burn the oil and the crust before the fish is fully cooked. Flip after about 3-4 minutes (once the bottom has a nice golden color) and continue to cook till the fish is flakey and the bottom is golden-brown.

That sounds yummy, Christin. I'll have to try that the next time I make some tilapia. Did you use the grated parmesan that comes in a can or the better quality kind? I see that you used two different kinds.

I use the good stuff...

I guess I need to be more specific... what I meant was... use the powder kind for the 3/4 cup... and used the shredded (like what you use to make parmesan "chips") for texture difference.
