This is my quick go-to meal when I've forgotten to defrost meat and it's 4pm. You've been there, ladies. I never cease to be amazed at how such a good meal can go together so quickly. I make sure I NEVER run out of canned clams. It's hard to find canned clams that don't have added sugar. Why, but WHY do they feel compelled to add sugar to clams, someone tell me? But there are some brands out there without sugar, Ocean Prince, for one.

They put sugar in clams because they put it in everything! I only use bottled salad dressing when I'm in a hurry for a marinade or have a function to attend. Try finding one with out sugar or HFCS. Even Newman's. Finally found an Annie's organic that has less than a gram of sugar per serving.

I love clams but my Cajun husband does not. Go figure. May fix him a steak and make linguine for me.

My husband and I used to love pasta with clam sauce but I never thought to make a low carb version. Clams are a bit carby though. There are about 9 carbs per 6 ounces of canned clams. There are about 6 carbs per 6 ounces of raw clams so most of the carbs are not from the added sugar.

I love your idea to serve it over zucchini pasta. I dug out an old clam sauce recipe that I used to make and realized that it's low carb without any tweaks (except for the carbs from the clams). I think it works out to around 5 carbs per serving plus whatever carbs are in your "pasta".

GARLIC CLAM SAUCE
5 tablespoons butter
1/4 cup oil
3 cloves garlic, minced
1/4 cup fresh parsley
4 ounces Monterey jack cheese, shredded

Sauté the garlic in the butter and oil. Mix in the clam juice and parsley; bring to a boil. Simmer 10 minutes then stir in the clams and cheese. Cook 3 minutes over low heat to melt the cheese. Serve over "pasta".

Makes 4 servings

I just have to break down and do that every once in awhile, too, MS. My husband can be pretty picky about veggies, in particular. He's gotten a little better over the years, but there's much room for improvement on what he'll eat. His mom just served canned vegetables, and right out of the can at that. No big surprise that none of his siblings like veggies much either. And I pretty much love them all!

But you know what they say.....opposites attract. LOL

Oooo. I never thought to melt cheese on it. I'll have to try that, LindaSue. My hubby sometimes sprinkles parmesan on top at the table. M-Jack sounds better to me.
