Has anybody tried this yet? It is low carb and paleo. I wonder how it would affect blood sugar. I ordered some, so I will give it a try and report my BS readings.

I'm going to be a lean, mean, fat burning machine!!!

It's from Julian Bakery--I wouldn't trust anything they do or say. Check out this blog entry that Jimmy did about a customer who actually had some of their bread tested:

And the only way to really tell is for you to eat some and then test your blood sugar in 15 or 30 minute increments for at least two hours afterwards.

They actually had it at my local grocery so I decided to try it. Personally I think it tasted worse than cardboard...not that I've eaten cardboard . I tried toasting it but it wouldn't brown. I tried to make a grilled cheese and the cheese melted and slid off the bread like it was plastic. Honestly it looks and feels like fake bread that someone might put in a display. I saw no redeeming qualities whatsoever. Seems I'm in the minority though if you go to their FB page, people are going gaga over it.

Yes - I have a loaf of the coconut paleo bread in the freezer. I don't like it for sandwiches or just for eating (as Shepherd says it won't brown), however it works great as breadcrumbs for meatloaf, meatballs, etc. I just grind in my bullet and add to my recipe. That's the only redeeming quality I've found. The almond paleo bread is just as bad - but great breadcrumbs!
