I just found Kelp noodles in the health section of Wegman's grocery store. They have 0 net carbs. They look like cellophane, but they taste very good once the sauce is poured on them. To prepare, just rinse them in water and cut them up with a scissors. I made a low-carb chicken alfredo to go over them, and they were delicious and filling.

The Kelp Noodles are a little hard to find in the aisle. They do not need refrigeration, so they are just on the shelves in the health food section in a bag containing a little water. The name of the company is Gold Mine Natural Food Co. I really am enjoying them. (And, I actually have dropped a few pounds on the weeks that I have eaten them--too soon to tell if it is a coincidence.)

I just found some at whole foods. The ones I found were in the dairy section. I haven't tried them yet. An Alfredo Sauce sounds like a good idea. They also have natural iodine which I imagine is a good thing.

It tastes good, but I was shocked to find the noodles are crunchy. That might take some getting used to. But I immediately thought that I would like them in a salad. Because they do have some nutritional value and add fiber with 0 effective carbs (1 carb, plus 1 fiber), I may try them in a salad.

Found this recipe out there for anyone who has difficulty with the crunchiness and wants to try them another way.
